We also have our very own Valtnauner house-wine. Senior chef Josef Unterholzner began with much passion to create his own "Vernatsch" wine. He was convinced that a good natural made wine had great healing powers and was therefore loyal to his knowledge and made his wine with much love for old tradition. This tradition is carried forth to this day here in our own winecellar by Walter, the homeowner, who (with his father-in-laws experience, his own new techniques) strives to make an even better "Vernatsch". And as wine-making lies in the family blood, their daughter Maria, after achieving her `Sommelier´ diploma now assists her father with new ideas as they jointly venture on with creating our delicious in-house wines.

The Valtnauner wine-cellar was established in 2003 as we went about with the outer renovations on the house. It is a lovely antique wine cellar with old wood tresses and traditional finishes. We also have a separate cellar where our wines are kept for maturing.

One of the highlights of our house is to hold a winecellar evening in the cooler months of Autumn where we take pride in explaining to our guests the production of our wines starting from the different grape sorts all the way through to the finished product. Such evenings are not only spent obtaining knowledge, but also enjoyed doing wine-tasting and eating the traditional South Tyrolean "marende".

Roasted chestnuts and a good glass of new wine!

The word "törggelen" is derived from "torggl", this being the tyrolean expression for the "winepress". This is a tradition which takes place in late autumn and one which we also enjoy in our house. After an enjoyable days outing in the colourful autumn landscape we offer our guests a "törggele evening" once a week in our ancient wine-cellar.

Dinner comprising of tyrolean specialities such as speck, cheese, sauerkraut, smoked meat and naturally our own red wine are a wonderful way of enjoying a very special autumn evening. The evening is closed off with fried chestnuts and our own "sußer" meaning (sweet wine).
